The Kick Off starts the game at each half, and the start of overtime periods as well as restarting the game after a goal is scored. The Kick Off is taken from the Center Mark. Defensive Players must remain outside the Center Circle, in their half of the field, until the ball is kicked. The kicking team is lined up in their half of the field and are obviously allowed to be inside the Center Circle, cause that's where the ball is. The Referee must signal before the kick is taken. As soon as the ball is kicked, and moves forward, it is in play. (Ball must be kicked forward of the Center Line). A Goal can be scored directly from a Kick Off, (unless otherwise specified by your leagues rules). The kicker can not touch the ball a second time until it has been touched by another player. If the Kick Off is not done properly, it is retaken. If the player taking the kick touches the ball twice in a row, an Indirect Free Kick is awarded to the opposing team. Don't get mad at the Referee for being strict with the Kick Off procedure. It's a simple task that must be done correctly in order to ensure fair play. When we see it with young players, they need to learn how to do it properly. With older players, it's usually laziness or an attempt to gain an unfair advantage. Oftentimes, we see the ball kicked backwards behind enemy lines. This is fine as long as the initial kick is forward of the line. Also, remember that players can not jump the lines ahead of the kick. They must wait until the kick is taken.
